I was born in 1965 My father ran a sushi restaurant, and I began helping with deliveries, preparation, and serving sushi when I was still in elementary school. At 19, I started working as a "Kappo" (traditional Japanese cuisine) chef in Kyoto, and moved to the United States at the age of 23 I worked as a sushi chef at the Suntory restaurant in Chicago, where I taught sushi-making to American, Mexican, Thai, and other international kitchen staff.
