If you want to actually swim with the dolphins, Water Planet is definitely worth a trip! They are wild animals so nothing is guaranteed, but I have personally been out with them hundreds of times and only twice not gotten to swim with dolphins.

If you want to escape the PCB style, drive west a few miles to Inlet Beach. There is public beach access as well as numerous shops and restaurants

In the state park, there is wildlife, beach access on the gulf as well as a protected area in the intercoastal/ 'the pass'. My favorite time of day is early morning in the state park.
